Dough: 200g cake flour, 1 tsp baking powder,  75g sugar, 1 pkt vanilla sugar, 1 egg(size M), 100g soft butter or margarine.

Cheese topping: 4 egg whites, 4 egg yolks, 150 g sugar, 750g quark, 1 pkt vanilla sugar, zest of 1 lemon, 150 ml milk, 1 pkt Dr. O. Kaesekuchenhilfe . Heat oven to 170o (150o for fan oven). Grease the springform (Ø26cm).

Dough: Mix flour and baking powder. Add all the other ingredients and mix well. Roll out 2/3 of the dough on the spring form bottom and pierce several times with a fork. Form a dough roll with the rest of the dough and press into the form to create a 3 cm rim.

Cheese topping: Beat egg whites with 1/3 of sugar.  Mix egg yolks with rest of sugar, quark, vanilla sugar, lemon zest and milk in a mixing bowl with a mixer at max. speed for 1 minute. Stir in cheesecake helper. Fold in beaten egg whites. (optional: add 100g raisins). Pour topping into springform. Put springform in oven.  Bake for 70 minutes.
