Dough mix for sweet potato pancakes

sweet potatoes (42%), corn starch, rice wholemeal flour, millet wholemeal flour, raising agent sodium bicarbonate, citric acid, salt, thickener guar gum.
In a bowl, mix 125 ml of water and 1 egg (size M) with a whisk and stir in the contents of the bag until they are free from lumps.
Heat 1 tablespoon of vegetable oil in a large, coated pan. For each pancake, add about 1 tbsp of batter to the pan and bake at medium heat until golden brown on both sides. Do not turn over pancakes until the bottom edge is lightly browned.
